To A Restaurant

walking from the train station

A few days after my double-header weekend, we had dinner in town with a group of Americans and Danes.

the lanterns are extra nice in the snow :-)

Alistair chose a *fabulous* restaurant called Koefoed, which specializes in food produced on the island of Bornholm

This is so much my kind of thing, it made me giddy.

under a coat hook -- a detail about the "old fashioned" processing of pork

Small farms, traditional, artisanal, local....the fact that Koefoed fiddles around with "molecular gastronomy" just sends me over the moon.  They had me at "hello".....

each chair has a sheepskin laid across

.....and when I arrived, they also gave me a glass of something sparkly with that "hello" ;-)

Let's look at the whole table:

It was set into a recessed room, with curtains draping the entry.

Mmmmm......like a wonderful playroom for foodies.  A playroom in which the toys are brought to you.

mustard almonds - bread twigs - salmon cream - root chips

It's hard for me to take photos in this kind of light; but I did it anyway.  These are the best ones I ended up having.

The highly fantastic news is, though, that the link above to Koefoed has scrolling photos of most of the dishes we ate.....and of course, their photos are *quite* excellent.  So, I'm gratified by this service they have done for me, as well.

ha ha!

We had the tasting menu, which turned out to be an excellent way to go -- letting the restaurant decide for us made it both easy and also full of surprises.

This one was my favorite:

Sol over Gudhjem -  quail eggs served in a glass jar with a rye chip, chive oil and smoke

When the top is opened, the smoke spills out.  LOVE the nest of straw, too. That chive oil in the bottom was so good, I stuck little pieces of my bread in the glass with my fork to get every drop.

The pork was excellent, too -- all crispy and caramelized on the outside, but tender and full of juice on the inside; served with roasted parsnip, garlic cream, as well as a parsley sauce that I'd have eaten on it's own by the spoonful.  I think the Americans appreciated the PORK RINDS more than anything, though.   ha ha!

There were two desserts:

Licorice Ice Cream, lemon semifreddo, meringues & dried bread ....

.....with grated licorice over the top.  The dried bread was curious to me -- but it played a role in nearly each dish we had.

Chocolate mousse in a shell, caramel cream and buttermilk "snow" with wood sorrel.  The photo on the Koefoed site under Dinner Menu is MUCH better....and shows the bridge-shaped bread "cookie" in the middle.

What a great evening :-).....

.....happy table in the alcove.
